Whether you’re eating them as breakfast balls or a delicious dessert, these apple oatie chocolate chip muffins are great and healthy at any time of the day.
INGREDIENTS:
* 2 Cups Whole Grain Oats (I use Bob’s Redmill)
* 1/8 Teaspoon Salt
* ½ Teaspoon Cinnamon
* 1 Cup Malk Organics Unsweetened Vanilla Almond Milk
* 2 Medium Bananas
* 1 Large Apple, peeled, cored, and diced (I used Fuji)
* Lily’s Sweets Chocolate Chips (as much or as little as you want)
STEP 1:
Preheat oven to 400F and line baking sheets with parchment paper.
STEP 2:
In a large bowl, unpeel the 2 bananas and mash for 2 minutes.
Once mashed, add in the 1 cup of almond milk to banana mix.
STEP 3:
In a small bowl, combine oats, salt, and cinnamon together.
Pour that mixture into the large bowl with almond milk and bananas.
STEP 4:
Wash the apple, peel, core, and finely dice.
Add in the diced apple slices/cubes and chocolate chips.
STEP 5:
Mix all ingredients together.
Using an ice cream scooper, scoop into small circles on the baking sheet.
Place into the oven for 12 – 15 minutes and let them cool for 5 minutes.
Store in the fridge or these can also be frozen.
