Shrimp Tacos with Cilantro Lime Slaw

Shrimp tacos are a regular in our house and the cilantro lime slaw is a MUST here! Here is my favorite (easy) weeknight shrimp taco recipe for you! Leave a comment if you try it, I love see the Well By Alli recipes in your kitchen!

SHRIMP TACOS INGREDIENTS:


* 1 Pound Wild Shrimp, Peeled, and De-veined
* 2 – 3 Tablespoons Taco Seasoning for Shrimp
* Salt & Pepper
* 2 Tablespoons Avo or EVOO for pan

* 1 White or Red Onion

* 1 Tomato
* Siete Foods Tortillas
* 2 Avocados Sliced



CILANTRO LIME SLAW INGREDIENTS:


* 1 Cup Plain Greek Yogurt (I used Fage)
* ½ Cup Tightly-Packed Fresh Cilantro
* ¼ Cup Freshly-Squeezed Lime Juice
* ½ Teaspoon Ground Cumin
* ½ Teaspoon Fine Sea Salt
* ¼ Teaspoon Freshly-Cracked Black Pepper
* 3 Green Onions (just the green parts)
* 2 Garlic Cloves
* 1 Bag Coleslaw Mix

STEP 1: 

On a cutting board, cut the cilantro, green onions, and garlic, (unless using minced garlic).

Then combine in a large bowl with Greek yogurt, lime juice, cumin, salt, and black pepper. 

If using a food processor, pour all ingredients into it.

If not using a food processor, make sure to chop all ingredients very finely and mix well together.

STEP 2:

Using a full white or red onion and full tomato, chop on a cutting board then place in two separate bowls.

Pour the avo or EVOO onto a pan and heat pan on medium.

In a small bowl pour the shrimp and taco seasoning and mix together.

Once mixed, pour the shrimp into the heated pan and sauté/grill/cook for 10 – 12 minutes.

Pour the onions into the pan and sauté (adding in extra EVOO if needed).

STEP 3:

Taking the bag of coleslaw, wash it under cold water, drain, and place into a large bowl.

Pour the slaw over the bowl of coleslaw, leaving some extra on the side for the taco. 

STEP 4:

Grabbing the avocados, begin to slice them in half and then into fourths and place onto a plate. 

Taking the taco shells, place the slaw on the bottom and shrimp, sauté onion, tomato, cilantro and sliced avocado on top. 

Drizzle some of the cilantro lime sauce on top and enjoy!

*optional toppings: sliced jalapeño or serrano peppers, crumbled cheese, black beans, lime wedges, peppers, etc.
